One ingredient coconut butter (and a couple of sleepy pooches)! It’s such a simple recipe that will also save you some of that hard earned money, honey. I’ll never quite understand why brands are selling this at at least $10/jar when you can usually snag a bag of shredded coconut for around $3 and whip up a couple fresh batches on your own. Trust me when I say it is soooo damn good, especially in a stuffed date!

1 to 2 cups of unsweetened, shredded coconut (I love the Bob’s Red Mill brand)

Simply add your coconut to a blender, start at a low speed and gradually increase, for about 2 to 3 minutes or until smooth and creamy.

I love the Bob’s Red Mill brand because it’s never given me any issues and blends SO easy. After a couple times of making this I also noticed that if you use less than 1 cup in the blender, it tends to stick onto the sides so be sure to use at least 1 cup. You could also use this recipe as a base! Feel free to add any of the powders from the workshop, matcha, cacao, vanilla, cinnamon, or even try it toasted!
