I’m on a real coconut butter kick these days! Whether it be the coconut butter chamomile coffee, stuffing it in dates, or adding it to a smoothie — I’m all for it! And adding it to these gluten-free oat flour chocolate chip cookies takes it to the next level.

oat flour coconut butter cookies

1/4 cup coconut butter (melted)

1/4 cup avocado oil

1 tbs nut milk of choice

1/2 to 1 cup of coconut sugar (depending on how sweet you like ‘em)

1 egg

3/4 tsp baking soda

2 cups of oats

1/2 cup of shredded coconut

1/2 cup mini chocolate chips


instructions

In a large bowl cream together coconut butter, avocado oil, milk, sugar, and egg until smooth. In a blender add oats, coconut, baking soda, salt, and blend on high speed until you have a flour. Mix the dry ingredients into the wet, then add in the chips. Refrigerate for at least two hours, roll into small balls on a baking sheet at 350 for 8-10 minutes.
