Sweet Potato & Parsnip Fries
Fries will forever be a favorite of mine. You’ll never see me turn down fries. And when made at home, they can be much healthier and super simple to fix up. I mix parsnips and turmeric into the mix for some added benefits but feel free to play around with your favorite root vegetables (especially this time of year).
Turmeric Roasted Sweet Potato & Parsnip Fries
oil (coconut, olive, or avocado)
Preheat oven to 400 degrees and slice up your parsnips and sweet potatoes into long squares (think fry shape).
Toss in a mixing bowl with oil, salt, pepper, and turmeric. Start with a little of each and add more as needed but mix until everything is evenly coated.
Lay flat on a baking sheet with parchment paper and bake for 20 minutes. Flip them and bake for an additional 40 minutes. Like them crispy? If you feel like they could use some more color and crunch turn the oven up to 450 and cook for an additional 5-10 minutes. Enjoy!
