Gluten Free Ice Cream Sandwiches


Gluten free coconut butter chocolate chip ice cream sandwiches. Hubba hubba! I’ve been having the best time and a lot of creative energy around turning some of my classic childhood favorites (like the adaptogenic root beer float) into healthier, adult versions. Also! I like to use the same ingredients in multiple recipes because I personally don’t love having to buy a list of new ingredients each time I go to make something new. If I’m going to give you a recipe for coconut butter, I want to be able to share more recipes using that coconut butter so you’re not constantly having to buy and buy and buy!

This week I had a serious craving for ice cream cookie sandwiches when it occurred to me that I hadn’t ever tried making them myself and they seemed simple enough, right? RIGHT! :)

First, you’re going to want to head over to the recipe for oat flour coconut butter chocolate chip cookies to whip up a fresh batch of cookies.

  • pint of your favorite ice cream


Once your cookies are cooled, you’ll want to pop them in the freezer for 15 minutes. Let your ice cream thaw slightly. Scoop a spoonful onto one cookie and gently press another one on top. Use the back of a spoon to smooth out the sides, and then roll into a small bowl of mini chocolate chips from the cookie recipe. Pop back into the freezer for a 1-2 hours annnnnd enjoy!
